The good part of the evening starts slowly.

We opened Lume for the kind of night that has no agenda. A bottle chosen together, a few things from the kitchen, and room to stay for one more glass.

Ten tables. One long communal table. A cellar built in 1898.

The list changes with the light.

Our bottles travel a short distance: from the volcanic soils below Mantova, the hills of Selvapiana, and a handful of growers we know by name.
